Zucchine in Agrodolce (Sweet & Sour Zucchini Recipe, Sicilian Style)

This traditional Sicilian side dish is the perfect balance of flavors: the freshness of zucchini, the brightness of vinegar, and the aromatic touch of mint. What ties it all together is a generous drizzle of our Magnifico extra virgin olive oil (EVOO), which gives the dish its smooth, rich finish. Simple yet elegant, it’s a true taste of Sicily.

Ingredients:

  • 3 medium zucchini
  • 3 tbsp white wine vinegar
  • 2/3 tbsp of sugar
  • A handful of fresh mint leaves
  • 3–4 tbsp extra virgin olive oil
  • Salt to taste

Instructions:

  1. Wash the zucchini
  2. Slice the zucchini into thin round slices (not to thin and not to thick)
  3. Fry in 4 tbsp of EVOO until golden and tender.
  4. Add a pinch of salt while frying
  5. Drain on paper towels, then mix with vinegar, sugar, chopped mint, and a bit more olive oil.
  6. Let cool completely before serving — it tastes better after a few hours in the fridge.
